Highslide JSSnails Bon Appetite is the foremost snail/escargot producer in Australia, with a network of growers throughout the country. After reading an article in 1985 about a man in England who was farming snails, the Dyballs began to plan how they might raise Hunter Valley Snails – breeding the only edible snail, the common garden snail Helix Aspersa, and market them as the Australian escargot to Australia and the world. Finally they began the business began in November 2000 as fulfilment of their 15-year-old dream.

The snails are grown in a toxin and chemical-free environment, harvested at nine months when they are three centimetres in size and cream in colour. They are sold 'live’, ‘fresh' or 'frozen' in dozen packs and are available all year around. They appear on menus at The Verandah restaurant and The Cellar Restaurant in the Hunter Valley, Interlude Restaurant, and Circa The Prince, in Melbourne, and Monty's on Montpelier, in  Hobart.
