From the building industry to making muesli is not a common career move, but that is the ‘seachange’ that Rob Hunt began in 2006. Now he produces 10 different varieties of uncooked, low processed muesli.  Based on whole, rolled, untoasted cereals, they include wheat, barley, rye and of course oats.  There is a wheat-free muesli, a gluten-free one based on whole, puffed brown rice and amaranth for protein, a coconut-free version, a fruit-free variety, and several chocolate mueslis.

Uncooked muesli is not unknown, but Green Hat Muesli adds extra nutrition with other non-hybrid cereals. Rob Hunt believes these have enough variety to satisfy dietary and taste preferences. Although made using a large proportion of expensive ingredients, they remain cost competitive. The mueslis contain no colours or added preservatives and Hunt’s aim is to incorporate organic ingredients as the business grows, and soon produce a fully organic variety.

Green Hat Muesli has a strong Australian content. Raw ingredients are sourced from Victoria, SA, Queensland, Tasmania, using only some selected imports that aren't available in Australia.

Born and educated in Western Australia, Rob Hunt came to live in Wheatsheaf (just outside Daylesford on the edge of the Wombat State Forest) in 1986. On a two-hectare bush block, he and his wife built an adobe house amongst the 30-metre tall eucalypts. Fresh air, clean rain water and natural surroundings had lured them away from Melbourne. Since living in the area, Rob has been a field scientist, a maths/science teacher and most recently a domestic builder. At 48, his body was telling him to make yet another seachange, so he started marketing the muesli that he’d been making for the family for 20 years. It proved so popular that he built a new commercial kitchen on site at his home and now the muesli business has a life of its own and is expanding rapidly.
