SUGAR BARK
Line a baking tray with foil and scatter caster sugar evenly over it. Don’t have a very thick layer, just enough to cover it well. Place in a preheated moderate oven and cook for 10 or so minutes until it has turned golden all over. You have made toffee of course, but it has to be the easiest way ever. Let the tray cool on a rack. Remove from the foil when cool and break up to serve over desserts or cakes. I use it on an angel food cake that I make and it looks sensational amongst the cream and berries. It always gets compliments yet I feel a bit embarrassed as you have just seen how little time and effort it takes.
