"We decided to cultivate truffles because of the challenge," says Frank Downes. "It is a very young industry with the first truffle in Australia being found only 10 years ago in 1999 at a trufferie in Tasmania."

With even more of a challenge ahead he adds, "We are now investigating the cultivation of the white truffle, considered to be the rarest food on the planet."

Bonnes Truffes has been established for six years, and now produces fresh Black Perigord truffles, available from late May to early September, and truffle products.

Fresh truffles are sold to restaurants and wholesalers in Europe, complementing the European season which runs from mid-December to February-early March. The company also supplies local restaurants in the Southern Highlands, Sydney, Melbourne and Canberra.
