Tonya Jennings has always been passionate about food and cooking, so it makes perfect sense that she should combine it all at her home high on a ridge at Kureelpa in the Sunshine Coast hinterland at the heart of abundant suppliers of fresh, high quality and innovative local produce.

On the Ridge Cooking School opened in March 2007, and it is here that students can learn to cook whilst experiencing the lifestyle and beauty of the Sunshine Coast hinterland, with views of the valley and out to the Coral Sea. With this backdrop they discover how to cook modern Australian cuisine, taking the best ideas, and using fresh local produce from the local food trail. Tonya shares her passion for cooking healthy, tasty, delicious food, and shows classes how to combine cooking principles, techniques and inspirations gained from many cooking traditions and cultures to create food we like to eat today.

A variety of classes are offered, including the signature class – A Slice of the Hinterland – which showcases local providores and seasonal products sourced from the Sunshine Coast food trail. Others include Italianicious – Cooking with Passion; A French Odyssey – Journey through France; Coastal Catch – Seafood Delight; and Mediterranean – Touch of Spice.

Tonya completed her chef’s training at Holmesglen in Melbourne, and has attended many Australian and overseas cooking schools, including The French Kitchen in Melbourne, and Howqua Dale Retreat, as well as Le Cordon Bleu Paris and Ritz Escoffier. She has also attended Ann Willan’s La Varenne in Burgundy, and Leith’s School of Food and Wine in London, and visited regional schools in the Dordogne, Normandy and Tuscany.

In the classes Tonya generously and enthusiastically enjoys sharing her knowledge, experience and ideas. She gives interesting foodie hints, tips and musings both during the sessions and whilst sharing the delicious lunch that is taken ‘at the table’, with wine, overlooking the views of the valley and beyond to the sea.

Tonya and her colleague Cathy Miller have compiled two cookery collections of On the Ridge favourite recipes, one on Festive Celebrations and most recently A Slice of the Hinterland – Cuisine of the Sun: Cookery of our Sunshine Coast and its Hinterland – a marvellous collection of some of the recipes used in the classes.

In September, this year they are hosting a culinary tour to France, where they will also be presenting two cookery classes to a Melbourne group of travellers in the Picnics in Provence tour in a delightful Provencal villa.  This year’s tour is fully booked, but bookings are open for next year’s tour in August / September 2009.

Advertised classes are presented on weekends.  Private classes may be booked at other times.

DIRECTIONS: On the Ridge is located at Kureelpa, in the Sunshine Coast Hinterland, 100kms north of Brisbane just off the Bruce Highway. It is 1.15 hours from Brisbane airport, 30 minutes from the Sunshine Coast airport, and 45 minutes from Noosa.  Kureelpa Falls Road is off the Blackall Range Tourist Drive, before Mapleton and just after the Nambour Hospital.
