When Lark Distillery began 16 years ago, Lyn Lark was the only female distiller in Australia. Now daughter Kristy has learned the magic as well. In fact the distillery offers the chance for others to learn too as it now offers a most attractive opportunity for any devoted single malt whisky fan. During a completely unique four-day Whisky Experience Tour people can learn about whisky and how it is made, then participate in the process of making whisky and even produce their own 20 litre barrel of whisky to take home. This is one of a range of tours offered by Lark.

Tasmania is ideally situated to make malt whisky, and yet 150 years after the last licensed Tasmanian distillery closed its doors, it took a whisky lover to realise the environment was perfect. Bill Lark realised that that everything you need for a world-class whisky was in Tasmania - rich fields of barley, an abundance of wonderfully pure soft water, highland peat bogs, and the perfect climate to bring all the ingredients together in a marriage of science, art and passion.

The vision of producing Tasmanian malt whisky was born on a trout fishing trip in the highlands of Tasmania. Bill's father in-law Max produced a wonderful bottle of single malt, and as they enjoyed a drink in the park at Bothwell, surrounded by Georgian buildings, barley fields and the gentle flowing of the Clyde River, Bill remarked to Max, "I wonder why there isn't anyone making malt whisky in Tasmania".

Today the Lark Distillery is one of Australia's leading distilleries, producing high quality, premium distilled products using traditional distilled methods.

The first Lark Distillery copper was found at an antiques auction, hidden away amongst the bentwood chairs and mahogany tables. Today the Distillery runs a 1800 litre copper pot still, along with a 600 litre spirit still, and produces ten to twelve 100 litre barrels per month.

Tasmania grows some of the world's best brewing barley, the highlands abound in rich peat, the water is soft, clean and pure, and the temperature and humidity create a climate that is well suited to the production and maturation of fine malt whisky.

Lark's premium distilled single malt whisky, spirits and liqueurs are carefully brewed from peat smoked, malted barley in the copper pot stills and proudly matured in small oak casks, delivering a rich smooth malt whisky with a delightful complex character in just five years. The malt whisky is now available at cask strength and the Distillery offers specially selected releases, handpicked by its distiller from a single cask.

In a further local connection it also distils a range of premium spirits and liqueurs made from Tasmanian ingredients; Huon Valley apples, cherries, native bush pepper and local grapes and unsurprisingly their products are heavily awarded, sold nationally and overseas, and the company is very proud of them.
